The 5X, 6X and 7X are multiple generations, the main differences would be using Poly RealPresence Group hardware or Poly CCX desk phones.
The key differences would the form factor, display support 2 monitors vs 3 monitors (500 supports 2 and the 700 supports 3), the I/O ports via their hardware form factor and a built-in multi-point bridge. The 500 supports up to 6-way video calls and the 700 supports up to 8-way video calls.
Please note: The RealPresence Group series is End-of-Life and has been replaced with the Poly Studio X, such as the X50 and X70.
